These cookies were ok for me but definitely tasted healthy. I made a dough log and put it in the freezer to just slice off the number of cookies I want to bake when I have a hankering. They do taste good, but I would add an extra half cup of oats to help stiffen them up for next time with the same substitution. I also love to bake with oat flour. The pudding addition sounds awesome . No more guilt while enjoying my cookies. They were oily, gritty, and the flavor was just awful. I did leave the batter overnight in the fridge as I wanted to crown them as Breakfast Cookies, but prior to baking it needs to rest at room temperature for about 20-25 minutes for easier rolling. But this one, it’s a winner. If you try these again, perhaps use a little less oat flour or a little more coconut oil. I wanted them to be the healthiest possible cookie, but not to taste like…cardboard. And I added 1/4 cup of Bob’s Red Mill Whey Protein, 1/8 cup of chia seeds, and and 1/8 cup of ground flax. What am I doing wrong? I added my chocolate chips on top to sweeten up the second batch of cookies. Beat everything together until just combined. I tried these and ended up substituting out the coconut oil as I am not a fan of it. And you spell it right too I wish I could tell you for sure, but I’ve never tried that substitute so I really don’t know if it would work and how much to recommend. I just wanted to mention a mistake I made that really messed up my batch: the use of coconut spray instead of a jar of coconut oil. They are going to be a little more dry than a regular cookie because they aren’t loaded with butter and sugar But you may have slightly over measured the oat flour (sometimes packing it in a measuring cup gives you more than needed), so perhaps try a little less oat flour next time. I would love to try this recipe, but I am wondering, how do I convert from cups to ml? Combine the vanilla extract, large egg, and brown sugar in a bowl. Hope that helps you.
